Ingredients
1½crolled oats
½cvegan vanilla protein powder
½cunsweetened shredded coconut
1ccreamy peanut butter
¼cagave
2tspvanilla extract
2-4tbspwater or non-dairy milk (if needed)
⅓cvegan chocolate chips
Instructions
In a medium bowl, combine oats, protein powder, and coconut.
Add peanut butter, agave, and vanilla and mix until well combined. Test the consistency of the mixture by pinching it in your hands. If the mixture is too dry and doesn’t hold together, add water or non-dairy milk one tablespoon at a time until a cookie dough-like consistency is formed.
Fold in chocolate chips.
Using your hands, roll the mixture into balls. This recipe makes about 18 tablespoon-sized protein balls.
